Eating Preserved Meats?

Nitrates (also called Nitrites) is a preservative and used to set color in food. Nitrates and Nitrites form Nitrosamines in the body. Nitrosamines are carcinogenic.

I read somewhere that Germany banned the use of nitrates.

Most preserved meats contain nitrates. This includes foods that are typically pink in color like bologna, salami, pepperoni, hotdogs, corned beef, pastrami, bacon, and cured ham.
